    In NE Thailand much of the cooking is done over charcoal burners. You frequently see small charcoal kilns in farms or along river banks. In the winter wood is stacked in the kilns and lit. Then the kiln is bricked in except for a small hole in the roof. The wood smoulders for several days forming charcoal. Then the fire is put out with water, the charcoal put in to sacks for sale or storage.
